mini pies

One of my favorite desserts to make are mini pies.  I know Lauren has blogged about hers, but I make mine a little differently.  First, I make them from pre-made pie crust because it is so much easier.  I use a bowl to cut out little round circles that fit perfectly into a muffin pan, fill the curst with apple filling and top it off with some cake mix and a pat of butter.

I bake them up, then wrap them in press-n-seal and then in a zip lock.  Then I throw them into the freezer.  So whenever Paul want’s a quick dessert, all he has to do is warm it up in the microwave. 

 all that individual sweetness!

I know, I cheat a bit, but you wouldn’t know it to taste them!

mmmmm....hand whipped cream!
